Chef Benigno "Ninoy" Sadorra hails from Bambang, Nueva Vizcaya in the Philippines. The Cuaresma (Marlo's maternal side) and the Sadorra family roots are deep with Illicano traditions and recipes, many of which you will find in our menu!

Sara Docken comes to us from Minnesota and joined the team as a server while attending UW Oshkosh. Sara is a certified OTA and now holds the title of the Front of House Manager at Manila Resto! Sara has a passion for the service industry and loves helping our guests and team have memorable experiences at Manila!
